Bay leaves come from the bay laurel tree (Laurus nobilis), a fragrant evergreen shrub native to the Mediterranean. The leaves themselves are smooth, glossy, and typically elongated with a pointed tip. They have a dark green color on top and are slightly lighter on the underside.

In terms of flavor, bay leaves are known for their aromatic, slightly bitter, and herbal taste with subtle notes of eucalyptus and thyme. They're often used in cooking to infuse flavor into soups, stews, sauces, and braises. When cooking with them, it’s common to add the whole leaf at the beginning of cooking and remove it before serving, as it's tough and not meant to be eaten directly.

Bay leaves also have a long history in symbolism, associated with victory and honor in ancient cultures.
