A whole cinnamon stick is a rolled-up piece of dried bark from a cinnamon tree, commonly used to infuse flavor in both sweet and savory dishes. There are two main types:

1. Ceylon cinnamon (true cinnamon) lighter color, delicate texture, subtle flavor.
2. Cassia cinnamon darker, harder, more pungent and spicy flavor; more common and inexpensive.
