Galangal

Galangal is a rhizome closely related to ginger and turmeric, belonging to the Alpinia genus in the ginger family (Zingiberaceae). It has a tough, light brown skin with a firm, pale flesh inside. There are two main types commonly used in cooking: greater galangal (Alpinia galanga) and lesser galangal (Alpinia officinarum).

Galangal has a sharp, citrusy, pine-like aroma with a spicy, peppery, and slightly sweet flavor. It is more pungent and aromatic than ginger but less sweet.

It is a key ingredient in Southeast Asian cuisines, especially Thai, Indonesian, and Malaysian dishes. Galangal is often used fresh, sliced or crushed, but can also be found dried or powdered. It adds a distinctive flavor to soups like Thai Tom Yum, curries, and stir-fries.

Beyond cooking, galangal has been used in traditional medicine for digestive aid, anti-inflammatory purposes, and to treat colds or nausea.
