Lime leaves
Lime leaves, particularly from the Kaffir lime (also called makrut lime), are widely used in Southeast Asian cuisine and have distinctive characteristics:
Appearance
* Shape: Uniquely double-lobed or “figure-eight” shaped two connected leaves on a single stem, almost like butterfly wings.
* Color: Bright to dark green on the top side, with a slightly lighter underside.
* Texture: Glossy, thick, and somewhat leathery.
Aroma & Flavor
* Fragrance: Very aromatic, with a strong citrus scent, more intense than regular lime.
* Taste: Fresh, tangy, and citrusy with floral and slightly spicy notes — similar to lemongrass or lemon verbena.
Culinary Use
* Common in Thai, Indonesian, and Cambodian dishes.
* Often used in:
* Soups like Tom Yum
* Curries and stir-fries
* Rice and seafood dishes
* Usually added whole and removed before serving, or sliced thin for salads or garnishes.
Other Notes
* Not to be confused with leaves from regular lime trees (like Persian lime), which are much milder and rarely used in cooking.
* Kaffir lime leaves can be used fresh, dried, or frozen.
